This stunning méthode traditionnelle sparkling wine has been created through the combination of cool climate Pinot Noir from Tumbarrumba grown under the gaze of Mt Kosciusko, with bright, crisp Hunter Valley Chardonnay. Although stunning alone as an aperitif, this wine is also the perfect accompaniment to freshly shucked Sydney Rock oysters. – 12.5% Alc/Vol

Winemaker's Notes

Small parcels of select fruit have been hand crafted with minimal intervention and stored on lees for 18 months to develop this high class sparkling wine with a soft mousse, aromas of strawberries and a hint of the sea, followed by flavours of strawberries, biscuit and oyster shell on the palate, with a smooth, rewarding finish.
